VESI KIELELLÄ Kaiken maailman pallerot
(Mouthwateringly Good - All the World's Balls)
I wanted to write a book for people with children and modern commitments to inspire them to cook good, tasty home food. So I set out to look for a common denominator for recipes that use affordable and versatile ingredients that you would easily find in your kitchen when inspiration sparks - which can even happen in the middle of the night! This is how the balls book was born. All the book's recipes are similar in the sense that you first prepare a dough from meat, fish or vegetables, then add some lovely spices, roll into balls, and finish up by oven-baking, boiling, grilling, deep-frying, steaming… Even the desserts are ball-shaped: potato bakes, sugared oranges, truffles, and so on. The recipes have been collected from around the world - every country has its own particular ways of preparing balls dishes, and I've also added a few of my own. The result is a balls journey around the world with all the flavours you could imagine!

My love of food has its beginnings in my childhood home, so this book naturally includes the best recipe for that delicious, old-fashioned färssi (mince meat pudding - my mother's recipe!) and the unbeatable smoked herring. Reindeer meat and fish are among the best of Finnish ingredients - something I believe people could be making use of much, much more at home, especially as they're so easy to prepare! Reindeer filet spiced with rosemary and garlic, or a gentle fish loaf can save the worst of days. The book also contains a couple of excellent Italian recipes, as well as the best recommendations from my restaurant and friends.
