In the herb garden and kitchen of Namaste, you will experience cooking through all of its fascinating stages. You will make an exciting journey into the realm of senses and aromas.

Together with participants, we always prepare food from the best ingredients in season. Here it is truly possible as ingredients are gathered from our own plot, and what we don’t have, we get from the neighbours. Everything, however, is not available even from next door, as the piquant touches into our foods come from the country cuisines of the Mediterranean and Asia. The abundant and refreshing variety of their flavours fits perfectly with the flavours of our herb garden.

Meat, fish and eggs come from local producers, and as long as we can get the goats to feed on the grass, we’ll get to make our very own goat’s milk cheese. Yummy!

A typical spring-time meal might include:

A velvety nettle soup as a starter

A main course of spring lamb marinated in herbs with delicious stewed potatoes and gravy

Rhubarb tatin for dessert

When it is time for new potatoes, we pick them from our own soil and enjoy the very first ones with butter, dill and sour bread. After that, we start developing variations on the theme… pesto potatoes, potato salad with herb dressing… ah! If you haven’t tried Mirja’s pesto made from our very own basil leaves, you don’t know what pesto is!

Baby carrots caramelised, cute beetroots mashed with butter and sage, and leek and broccoli we might serve French-style á la vinaigrette!

Will we have asparagus this year…? We will plant artichoke, kohlrabi, parsnip, swede, peas, various kinds of beans, onions and leaf salads. Chantarelles we collect from the forest, berries from the market, apples grow on our own and our neighbours’ trees...

The list is endless but we have to stop somewhere. Why not come yourself to see, experience and enjoy life at its fullest!
